The 33-year-old burgeoning chef, originally from Valenciennes, has been totally conquered by the beauty of La Côte d’Opale especially after winning the cooking contest and so decided to start his career there in 2006.
His first spot wasa ‘brasserie’ in Montreuil Sur Mer where he spent three years, then beefed his career up by working in Le Château de Montreuil from 2009 two 2014 . the building has long been managed by the Michelin-starred Christian German. Driven by a passion for more challenge Julien decided to share the opening of L’Anecdote in the same city, after the two- starred chef, Alexandre Gauthier from La Grenouillère restaurant. He spends five years there assisting Samuel Pesquet until 2020 .
LAURA FLORES SZYNDLER
Of Mexican origin, Laura 29 years old, grew and studied in Puebla where she also worked in many renowned restaurants.
In 2013, Laura did a one-year training in Le Château de Montreuil with Christian German as manager, then after graduation, she carved her way through luxurious guest houses along the Mexican Pacific Coast.
Back in France, in 2016, she worked in Château du Courcelles before joining the L’Anecdote team in Montreuilsur Mer for a year.
From 2017 to 2020, she was a head waiter in the two-starred restaurant La Grenouillère under Alexandre Gauthier as chef.
